Love in a cup.

No, no, this isn’t a Valentine’s Day related post…but I did happen to make some peanut butter hot chocolate for dessert tonight. Jenna’s recipe is to die for…who knew it was so easy?

Let’s start with the healthy stuff…

Lunch= spinach, cucumber slices, mushroom slices, yellow pepper, grape tomatoes, and 1 oz. goat cheese (my favorittteeee)! Dressing: a little maple agave, some extra virgin olive oil, some red wine vinegar, salt, pepper, garlic powder and ginger powder. YUM.  I love having salads for lunch.

After work, I  went to the gym and hung out on the NEW spin bike they just bought for a half hour or so.  The spin bike has it’s own screen and you can pick different workouts which have different trainers doing the ride WITH you and helping you along…definitely a great purchase.  Then,  I walked on the treadmill for a while and came home…

…to make Dinner= TJ’s frozen shrimp stir fry.  Easy as pie because you literally just heat the shrimp, add the veggies, add the seasoning packet…and in my case, add some frozen artichoke hearts…

…with a cup of TJ’s butternut squash soup on the side.  Heat and serve is my favorite kinda healthy Smile

Served with: 1/2 sandwich thin and hummus, and a piece of multigrain toast for some soup dipping action.

Now for the good part…

Mix a little of all of the above, plus some sugar, into a sauce pan, heat until it starts to simmer, and continue to whisk so that there are no peanut butter chunks.  Once warm and creamy, pour into your favorite mug and serve with a few mini peanut butter cups Smile   (For recipe, click [the other] Jenna’s link above).)

I’m a little embarrassed to say I could only drink half of this concoction.  It was too delicious and too rich to just drink quickly like my regular diet hot chocolate. YUM.

I hope you all had a fabulous Monday!! Only 4 more days until the weekend…and only 11 days until I get to head home to Vermont for almost a week of vacation, followed by a weekend of my Dad visiting DC for a few days!! Can’t wait!

DC Blogger Meet Up!

Thanks again to Lauren from The Biochemista for hosting so many of the DC food bloggers in her cute apartment last night!  Admittedly, I was a little nervous meeting 20-25 new food bloggers, but ended up meeting some wonderful people there!

I met up with Erin and had coffee at a cute little café/bakery in Dupont about an hour before we were supposed to meet up at Lauren’s.  It was so fantastic to finally meet her, and as she said on her post earlier today, it was great to have such great conversation and plenty to talk about! 

We walked from there to Lauren’s house.  Everyone brought wine, a few bloggers brought some DELICIOUS food to go with the delicious appetizers that Lauren had already prepared for the gathering.  A special shoutout to Lisa for her ahhhhmazing Oreo truffles.  I don’t think I want to know how many calories were in them, but I had two and Danielle and I had to convince ourselves to walk away from the table. They were SO SO good.   I also happened to help myself to a couple servings  of Emily’s dip. Thanks ladies for such great eats!

As a food blogger, I totally failed at taking pictures at all…despite the fact that I even dragged Erin to CVS to buy batteries for my camera before we sat down for coffee.  Le sigh…

Overall, I had a great, great time and look forward to the next gathering/food blogger happy hour in DC!

I’m off to relax, nap a little, eat a little more, do some laundry and mayyyyybe peel myself off of my futon and go to a friend’s to watch the Superbowl.

Most likely though, I’ll put on my PJs and hang with the kitties and roommate to watch the game and whine about doing laundry later tonight…

Catching up

Whoa, sorry I have been MIA for a day or so….

Yesterday after work I took a harmless trip to Trader Joe’s (haha) that ended up taking THREE hours.  How? Still not sure…but that’s what you get for not bringing your car down to DC.

At least I made out with a nice load of Trader Joe’s groceries!!

One of them was this cereal:

Yum! I haven’t had shredded wheat for a few years.  I heated a cup of cereal in a cup of fat free organic milk, and it was awesome.  When I was little my dad used to make shredded wheat warmed up with butter and sugar.  It’s not quite as good as the way he made it, but this will do the trick for now Smile

Yum.  I also enjoyed some hazelnut coffee this morning with cream and a little maple agave.

And, I can’t get away from these peanut butter filled pretzels.

I knew it was a dangerous purchase, but they’re just too delicious.

Note to self: In case you haven’t noticed, you have a large peanut butter weakness.

I’m off to enjoy another cup of coffee.  My apartment has been unusually cold these past few days, so I’m cuddling with the kitties on my futon and about to watch The Girl with the Dragon Tattoo movie…has anyone seen it? I’m only letting myself watch the movies when I’ve finished each book, but I’ve heard good reviews so far.

The exciting news:  There is a DC Blogger Meetup tonight!! We’re all bringing different bottles of wine and an appetizer and will be mixing and mingling thanks to Lauren at The Biochemista.  Details with follow either tonight or tomorrow.

For now, I’m off to make that second cup of coffee, stick my hand in the peanut butter pretzel bag a few more times, and lay on my futon like a…er…peanut-butter-and-coffee-filled vegetable.

Long day, so for now:

Breakfast= quick oats, banana, peanut butter, brown sugar, nutella.

Lunch was a boring salad.

Dinner= panini with pesto, hummus, cheddar cheese, spinach, roasted red pepper, mushrooms.

And some cherries on the side. I <3 them.

Boresville

I’m sorry this week’s blog posts haven’t been much to sneeze at, I’ll try and make up for it this weekend! It’s been a busy week at the office so I’ve just been relaxing and keeping up on my sleep.

I skipped the gym tonight in favor of a brewski and bacon, egg and cheese.


Sandwich thin, two eggs, a sprinkle of cheddar cheese and two pieces of bacon. It was awesome.

And now my belly is full, the beer is making me sleepy, and I think I’m going to sink into my couch a little more, watch some quality tv and maybe have another beer :)
